Prosperity Poon Choy (Chinese New Year)

Ingredients:

  • VegeWorld Lion’s Mane Mushrooms, 200 gm
  • VegeWorld Layer Tofu, 1 block
  • VegeWorld Japanese Tofu Puff, 10 pcs
  • Chinese cabbage (cut into big pieces), ½ pc
  • Radish (peeled and cut into big pieces), 1 pc
  • Broccoli (cut into florets), ½ pc
  • Dried Shiitake mushrooms (soaked), 10 pcs
  • Snow peas, 10 pcs
  • 5 baby corn, 5 pcs
  • Yam (peeled & cut), ½ pc
  • Ginkgo, 10 pcs
  • Red dates, 5 pcs
  • Goji berries, 1 Tbsp
  • Vegetarian oyster sauce, 2 Tbsp
  • Soy sauce, 1 Tbsp
  • Corn starch, 1 Tbsp

Preparation:

  1. Simmer Chinese cabbage and radish in a large pot of water for 30 minutes, strain and save the stock for later use.
  2. Blanch Lion’s mane mushrooms, Layer tofu, Japanese tofu puff and other vegetables separately for 1 minute, then set aside.
  3. For the gravy, add 500ml vegetable stock, 200 ml mushroom water, vegetarian oyster sauce and soy sauce in a pot and bring to a simmer. Add in corn starch water (mix corn starch with 2 tablespoons of water) to the mixture, stir until the mixture thickens and then set aside.
  4. To assemble, arrange the blanched radish and Chinese cabbage in the bottom of a claypot or ceramic pot, then place the rest of the ingredients on top.
  5. Lastly, pour the gravy on top and heat the pot on the stove before serving. Enjoy!
