Ingredients:
- VegeWorld Lion’s Mane Mushrooms, 200 gm
- VegeWorld Layer Tofu, 1 block
- VegeWorld Japanese Tofu Puff, 10 pcs
- Chinese cabbage (cut into big pieces), ½ pc
- Radish (peeled and cut into big pieces), 1 pc
- Broccoli (cut into florets), ½ pc
- Dried Shiitake mushrooms (soaked), 10 pcs
- Snow peas, 10 pcs
- 5 baby corn, 5 pcs
- Yam (peeled & cut), ½ pc
- Ginkgo, 10 pcs
- Red dates, 5 pcs
- Goji berries, 1 Tbsp
- Vegetarian oyster sauce, 2 Tbsp
- Soy sauce, 1 Tbsp
- Corn starch, 1 Tbsp
Preparation:
- Simmer Chinese cabbage and radish in a large pot of water for 30 minutes, strain and save the stock for later use.
- Blanch Lion’s mane mushrooms, Layer tofu, Japanese tofu puff and other vegetables separately for 1 minute, then set aside.
- For the gravy, add 500ml vegetable stock, 200 ml mushroom water, vegetarian oyster sauce and soy sauce in a pot and bring to a simmer. Add in corn starch water (mix corn starch with 2 tablespoons of water) to the mixture, stir until the mixture thickens and then set aside.
- To assemble, arrange the blanched radish and Chinese cabbage in the bottom of a claypot or ceramic pot, then place the rest of the ingredients on top.
- Lastly, pour the gravy on top and heat the pot on the stove before serving. Enjoy!
