Buttermilk Golden Oyster Mushroom

Ingredients:
- 1 packet VegeWorld Golden Oyster Mushroom
- 2 tbsp or 30g margarine/plant-based spread
- 1 sprig curry leaves (approximately 0.9g)
- 1 big clove or 2 small cloves of garlic (approximately 6g)
- 2-4 bird’s eye chilli, according to preferred spice level (approximately 2.50g)
- ½ cup or 125 g coconut milk
- Pinch of turmeric powder
- Cornstarch mixed with water to form a slurry (4.3g cornstarch + 7.25g water)
- Salt, to taste
- Sugar, to taste
- Mushroom seasoning, to taste
Preparation:
- Deep fry the Golden Oyster Mushroom at 180 degrees Celcius for 5-6 minutes
- Melt the margarine, stir-fry garlic, chillies, and curry leaves until fragrant.
- Add in coconut milk and a pinch of turmeric
- Add in cornstarch slurry, stirring frequently and bring to a gentle simmer
- Add in sugar, salt and mushroom seasoning
- Serve with Golden Oyster Mushroom. Enjoy immediately!
